Recipe: Cream Cheese Blueberry Pie

What do you do with 12 pints of fresh blueberries?  PIE!


With 3 boys and only 2 beaters, I usually skip this step.  Since the big boys were away, #3 got his first beater cleaning opportunity & thoroughly loved it!!!!


Okay, so I didn't actually use all 12 pints pie-making, but I couldn't pass up using a couple for this delicious dessert.  With Philadelphia Cream Cheese priced at $.99 this week at Dillons and blueberries for right at a dollar at Aldi, it was also super inexpensive to throw together!

You can click here for the full recipe from Lisieux Bauman at All Recipes.  I would suggest using about 6 oz of cream cheese (3/4 of a normal block) and adding a teaspoon of vanilla extract to the cream cheese/confectioner's sugar mix.  Otherwise, the directions were perfect!
