Recipe of the Week: Lime Chicken Soft Tacos

I wanted to wait until we made this and taste-tested it before posting, so I'm a day late on my weekly recipe.  However, this one was worth the wait.  On a scale of one to ten, Lime Chicken Soft Tacos from AllRecipes was DELICIOUS (in other words, off the scale)!

Before you run out and make it, I did make a few alterations.  We had a big chunk of cheddar cheese and a left-over Italian shred blend, so we used those cheeses.  I also had a small bottle of lime juice, so I didn't purchase and squeeze a fresh one.  Rather than buy a bunch of green onions for just a couple, I sliced half of a yellow onion and cooked it with the chicken.  Finally, I added one drained can of Rotel Original Tomatoes with Green Chilies to the mix in the skillet.  It worked out great, especially since we were able to use up some items we already had and utilize my pantry stock of tomatoes.
