Breakfast for Lunch

Our family's favorite lunch is actually breakfast!  So, I decided to whip up a batch of Cinnamon Griddle Cakes as a special treat today.  These get super fluffy and melt in your mouth.  The recipe likens them to cinnamon rolls, and there is certainly a resemblance.  I also love that they are a snap to put together!
